First of all, I've never heard of this "
Steuergreifgabel 1917" (control gripping bracket 1917) before.

As far as I understand the text,
this lever/bracket enabled the obeserver to get some very basic control over the ruder pedal (normally operated by the pilot with the feet).
All other controls also had to be operated with the hands but it seems that the observer could reach around the body of the disabled pilot to actuate the ailerons and the elevator. The text also mentioned that some switches of the instrument panel were within the reach of the hands of the observer.
If the trigger of the gun was a part of the control column, the oberver surely had access to the guns, although this would not have made much sense.
It would be interesting to hear, if this device was ever needed and if it ever resulted in saving a crew from certain death.
