G'day Simes! Gee I dont think you could pin it down to just one.
I think you would need to read a few to get the Best picture.
A couple of my Suggestions would be "High in the Empty Blue" by Alex Revile. C.S. Lewis' "Sagittarius Rising" & McCuddens book " Flying Fury" -5 years in the RFC.
There is at least one written by a RFC Ground Crew of his experiences but I cant remember the Title. That is only from the British side. I suggest you need to Balance with at least one or two German ones. Anything by Peter Kilduff or Greg van Wyndgarden & the Ernest Udet one is also worth reading.

Iam sure other Forum members will weigh in on this subject.
