When I visited the New England Air Museum there was an exhibit on the Lafeyette Escadrille. One of the blurbs was about how after receiving their wings and collar tabs, the pilots were given leave to go into town (Paris) and have them sewn on to a uniform of their choosing. There were a few different styles and colors to choose from supposedly. I don't know how accurate this blurb was, but it leaves the uniform subject up to seemingly endless debate.
